Bundjalung man of the Northern Rivers
Region NSW who has travelled extensively
through Aboriginal communities, his
knowledge of native ingredients is unrivalled.
Mark’s signature fusion of indigenous flavours
and contemporary cuisine have become
highly recognisable through his television
show
The Outback Café
and numerous
national and international appearances
- with high accolades from Oprah and a
recent appearance in this year’s Masterchef.

Come and purchase some yummy fresh
seafood. There will be fresh seasonal fish
for sale, or be tempted by Port Lincoln’s
Kinkawooka Mussels or Coorong Wild
Seafood’s mullet, either fresh from the sea
or smoked. Keep your seafood cold in the
complimentary fridges while you enjoy the
rest of the Festival.
